  Pot of Chili Anyone?

I woke up this morning craving chili, which I h aven't made for a while. After Rex and I had a morning walk, (it is now too hot in the evening), I started a batch in the crockpot. This could be a vegeterian chili if you substituted Zucchini and used more beans.

One and a half to two pounds of lean ground beef sauteed with a large onion.
I always drain and rinse with hot water.
l can of tomatoes
One half can of Hunts roasted garlic spaghetti sauce and one half of the can filled with water.
l jar of red roasted chili peppers (available at Dollartree.
l can of pinto beans with Jalapeno peppers
Two and a half tablespoons chili powder
Two tablespoons oregno
2 bay leaves
l teaspoon basil
l teaspoon cumin
l tablespoons garlic powder or more if you like garlic.
l teaspoon rosemary (optional) the basil is optional too, some people don't like it.

I let it simmer all day in the crockpot and it doesn't have to b e watched. I have made vegeterian lasagna with zucchini and it is good but have never used it in chili. I don't see why it wouldn't work if you sauteed it with the onion. It seems to take on the flavor of whatever you cook it with. I have had spinach lasagna with low fat cheese and it was awful.

I put sour cream and cheddar cheese in my bowl of chili but Ted hates sour cream so he only gets cheese. It makes dynamite burritos also.

Maybe you could substitute ground turkey and have it heart healthy. Cold? What is that?

To me ,the weather is too hot for chili. I had a
recipe for vegetable chili bot ended up putting
meat in it.

We eat it in all kinds of weather. I like one layer of zucchini in lasagna. It seems to add to th e flavor.

mmmm That sounds tasty! What do you do with the other half of the tomato sauce? I could use boca crumblers (veggie) sine R likes those.

I put it in a jar in the refrigerator and have eggplant parmesan with the left over sauce. Crumblers would make it good.
