Nopales al Chipotle (Cactus with Chipotle Peppers)


This has become a regular dish at my house. I never dreamed it, no, not in my wildest!


 




Anyone care for the microwave recipe?


4 c. cactus strips cooked in 1 c. water for 12 mins. tightly covered with plastic wrap in microwave. (Stirring half-way through cooking time produces more uniform cooking.)


Strain the cooked cactus. Heat 2 tbsp. oil for 1 min. Add 1 c. tomato puree, 2 chopped chipotle peppers (canned) in adobe sauce, 1 cube of bullion and cactus. Cook for 3 mins. Sprinkle freshly chopped cilantro on finished product. Great with fresh corn tortillas!

I'm not a "mexican food eater"....or at least I wasn't....until recently. I do have to be careful, as spicy food and I don't always get along very well. And I am an admitted "wimp" when it comes to scalding my tastebuds.....but I can handle chicken fajitas and even chicken quesadillas.....just leave the spicy stuff off. And forget the refried beans (I won't even tell you what we used to call them in school!) and the guacamole and the hot peppers and the "cheese sauce" that has spice in it.
Gotta keep it pretty mild for me. So, I think I shall pass on this...but will pass on the info to my sweetie and my son-in-law.....both love mouth-blistering spicy food. (Okay - well it's mouth blistering in my mind anyway!!)

I was so looking forward to cooking up some of that but gosh, darn it all.......Safeway is fresh out of cactus.

will scorch your brains! Never cared for nopalitos myself-but then
I like okra and some folks don't.

R. I. mentioned Ted's which is the most wonderful restaurant in the world.
There Mexican food has no equal. The downside is that you have to stand in line forever!!

I love Mexican food at Ted's! I don't think this is on their menu though. We don't have any cacti in this part of the woods.

OK. You just HAD to go and mention Ted's while I'm down here where there are NO chain restaurants at all, much less something like Ted's, in my town (except for Domino's Pizza, but really, does that count?). Now, I'm angry!!

I enjoy Mexican food but, if I saw this on the menu, I suspect I'd pick something else...

I would as well, if I were in a Mexican restaurant. There are other dishes much more delicious, in my opinion. However, here at home, this works out just great.
