  I Have an Eggplant!

I know, eggplants are cheap, and you could have one too, but that's not really the point. I can remember that I used to like eggplant the way my maw cooked it. I think she breaded it and put it in the oven, but I can't be sure.

I read a blog recently about grilled eggplant. I think I remember who posted it, but since I'm not sure, I might as well go about the question this way....

Do you have a favorite eggplant recipe? I know, I could google it, but I want to know what actual people have done and how well they like the result. So, if you BBQ it, or bread it, or do anything else to it that you think makes it taste really good, please let me know!

A couple of years ago, I planted egg plant in our vegetable garden. It did terrific, but I am the only one who loved to eat it. So needless to say, I ate so much eggplant that summer, I haven't had any since

I did that with crabs once. Me and my buddy bought a bushel at the fish market when we were living in NYC. By the time we cooked them all and ate them, I was sick of crab. If only I could loose my taste for dessert!

The only recipe I have for Eggplant is to cut it up and throw it away I have never been able to cook these things so that they do not have such a bitter taste..Sorry I was no help at all

I'll post it in a blog, it's a meatless spaghetti sauce, a rataouille with eggplant. Sounds complicated, but just because they have you add things in a sequence so the ingredients don't all cook to mush. Once you've made it, the next time is easier. Come to think of it, though, it calls for zucchini and tomatoes, so it's a better summer dish when your garden is producing (I refuse to buy zucchini from the grocery store). I'll post something else I like. Go look.

My favorite eggplant recipe is to cook it and then feed it to somebody else. I can't stand the stuff! (My wife, however, LOVES eggplant parmigiana.
Where did they ever come up with name "eggplant" anyway?

Price Chopper had the white ones for $3.99/lb. Naturally, I went with the purple for 88 cents on sale!

I normally fried my first and work it from there.
Put it together and then in the oven.
Anything you want .Tomato sauce,cheese,etc.
Most if just to heat it up.If you over do it.
The egg plant becomes soggy and this I had when it is like that.
The Olive Garden served this and it is so bad.
Think that they nuke it for heat.Ugh

I eat eggplant any old way. I love it steamed, fried, grilled, etc. Try some eggplant parmesan. Skin it, dip first in flour, then egg and some bread crumbs, make sure your olive oil is hot hot hot, you want the eggplant to sizzle from the first second so it will be crispy. Frie turning several times till evenly brown, Put some pasta sauce in a pan and sprinkle with parmesan or romano or both, then put eggplant, coat with sauce and then smother in mozzarella and bake for 25-30 minutes at 350. Take out and mange' Enjoy!

Did it!! It was delicious! It made a good size casserole, so there is enough for tonight too. I'm planning to buy a few more this afternoon to experiment with. I think I can slice them and flour them and deep fry them in place of french fries.

my mom used to cook eggplant....and I always "hated it"....or more accurately I hated the sound of it.....I don't know that I've ever ACTUALLY eaten it! I should try some in our grilled veggie combo we've been doing lately....I bought this cool grill skillet thingy (holes all over in it)at Bed Bath and Beyond...spray it with Pam made for the grill...cut up a ton of veggies....yellow squash, zucchini, red, yellow and green peppers, onions, fresh garlic, asparagus, carrots and whatever else your lil' ol' heart desires. Sprinkle with EVOO, some Lawry's Seasoned salt, Everglades seasoning (have to get that in Florida - maybe you could check the web for it). Grill over medium heat, turning and mixing frequently. I usually put some more EVOO on it while it's cooking. So darned good and I have to admit....I do NOT like asparagus, or peppers of any color, but cooked like this....I love it all!!!

I used to make an eggplant parmigiana with spinach, tomatoes onions, garlic, garlic, and grated mozzarella on top, then make lunch sandwiches with it. Yum! It makes a nice entree as well.

Since I don't do breading, I grill mine. Cover lightly with EVOO and season with favorite herbs. I like rosemary and marjoram, grill on top of the stove or in the oven. While still warm sprinkle with Parmesan cheese. You can also bake them in the oven with Italian seasoning, tomato sauce, and mozzarella cheese.

I just tried a few slices on the grill. EVOO, and a few spices. I grilled them on high for 8 minutes and they were still a bit chewy, although they tasted good. Donna thinks they needed a few more minutes. I should also mention that high on the new grill is like medium on the old one. That's what you get for saving a few bucks.

Breading it is pretty good...that's we order it instead of veal or chicken parmigiana...it's a good alternative...
