  Reduce Your Risk of Pesticides

from "Living Cuisine" by Renee Loux Underkoffler

  • Buy organically gorwn produce whenever possible!

  • Wash all produce! Although pesticides infiltrate fruits and vegetables through and through, concentrated pesticides on the skin can be washed away. A few drops of apple cider vinegar ina bowl of water are helpful for rinsing or scrubbing vegetables and fruit. Use a soft brush to clean tough fruits and vegetables.

  • Peel produce if it is not organic. Certain fruits and vegetables can be peeled to remove pesticides on the skin and to avoid waxes, which cannot be washed off. Unfortunately, peeling produce removes the vitamins and minerals in and under the skins. Peel inorganic produce such as apples, cucumbers, carrots, beets, peaches, plums, nectarines, pears, eggplant, parsnips, potatoes, turnips, yams, and squash.

That's the right kind of book to read. I waste a lot of time reading horrifying murder mysteries! But, then, I like them!
