  Tomato Soup


I was not going to post this recipe... until I saw Annie's recipe for some fancy fish, which I probably will never make (not having a grill), just as the day before yesterday, I couldn't make Jeri's chili (not having a crockpot... somehow every time I buy one, it mysteriously disappears when I'm not looking.) So...

This is for those cooks among you, who scoffed when you read my chili recipe. No I don't know, but you know who you are.



Tomato Soup (from Yahoo)

2 tablespoons butter
2 tablespoons olive oil
(butter AND oil?)
1 large onion, chopped
1 tablespoon minced garlic
(onion AND garlic... well, okay)
2 tablespoons flour
3 1/2 lbs ripe roma tomatoes, chopped
(Look at all the chopping so far)
2 tablespoons tomato paste (3 1/2 pounds of tomato AND tomato paste?)
1 teaspoon sugar
3 cups fresh vegetable broth
(Where would we get this fresh vegetable broth?)
1/8 teaspoon ground cloves
salt and pepper, to taste
1/2 cup half-and-half
(And what would we do with the rest of the half & half?)


Melt the butter with the oil over low heat in a pot. Add the onion; cook over low heat for 8 to 10 minutes. Add the garlic during the last 2 minutes, stirring and sprinkle with flour and cook 3 minutes longer, stirring. (And, you're standing by the hot stove this entire time)

Add the tomatoes, tomato paste, sugar, and broth. Bring to a boil, reduce heat to a simmer and cover; cook over medium-low heat for 30 minutes. Season with cloves, salt, and pepper. Remove from heat. (Don't burn the soup)

Purée the soup in a food processor or blender, a small portion at a time. Pour through a strainer into a pot. Stir in the half-and-half if desired. Warm before serving. (Warm before serving? I thought we cooked this thing.)

Wouldn't it be easier to open a can of tomato soup, add a can of water, put it on the stove, and watch it for about 5 minutes so it won't boil over and make you have to clean up the mess?

Read the times. It takes over an hour to make tomato soup! Don't you have better things to do with your time?







All right... I concede that the other recipes (Jeri's and Annie's) were much simpler and sounded absolutely scrumptious!! I would make them if I could. I would love eating them. If you have a grill and a crock pot, I suggest that you go copy their recipes... I guess you already have. This article ends my fooling around. I vow to be serious from now on.

I think Campbell's tomato soup is great myself. I dump in a can of milk and add cheese crackers. I do make broccoli cheese soup and potato soup from scratch but tomato isn't worth the time it takes.

I think broccoli cheese soup would be the only soup I would ever make. The stuff in the cans tastes really bad! Potato, however, tastes pretty good.

I only make homemade chicken soup. and then only in winter! I am not one for spending all day in the kitchen cooking.

You can actually cook tomato soup??? What?? I thought Campbell's had the market on that. Next you'll be telling me you can cook pizza at home. What is this world coming to???

You could NEVER make pizza at home. I tried it once and the dough won't spread out.

Years ago they had self-service cafeterias. The in-crowd would draw hot water in a coffee cup. A walk to the table netted ketchup. Instant tomato soup!

For that homemade taste I always add a dash of pepper and a garlic clove. On Thanksgiving my aunt sent out for pizza.

I remember an old, old book (which is the kind of books they have in schools, unless the teacher spends a fortune of her own money to get newer ones)... anyway, it was Nancy Drew... I think The Case of the Missing Crockpots was ... no, that was even before crockpots!!!
