Okay, so I decided to splurge on myself and have some great cooking...my own. Hubby is away and I'm alone for one last night and decided to cook exactly what he would not eat and I would -- broiled shrimp and a broiled stuffed portobello mushroom (you know the giant ones) filled with little olive oil, parmesan and mozzarella. Yum.

Grilled shrimp a la Deb

1lb of fresh deveined (yuck, hate deveining the little suckers) white shrimp
salt and pepper to taste

marinade
Emeril's fish rub
Basil
Oregano
Lemon Juice
Olive oil
garlic powder
(all of the above as you need and to taste)
Toss shrimp in mixture let sit for about 10 minutes.

Heat oven on low broil.

Portobello mushroom
Drizzle top and bottom with EVOO and turn top down.
Fill with cheese of your choice and any other spices or garnishes. I like basil because it tastes pretty good on everything.
Pre heat your pan. Put it in the oven and get it very hot. Believe it or not, this will help brown your mushroom and your shrimp.
Place shrimp on one side and mushroom on the other. Broil for about 15-18 minutes at low heat. Serve and eat. Trust me, it melts in your mouth and it's one of the easiest meals you'll ever cook! Yum.

P.S. For dessert, I poached a pear in white merlot and lemon juice, talk about yummy. Later.

wow...it all sounds devine. I'm not a real big shrimp person but I might be tempted to try those.

WTG! That actually sounds good! Not that you wouldn't cook good.. the health-conscious thing, I mean. Anyway, that's what I do--eat lamb when Donna isn't home for dinner.

Hubby doesn't like shrimp and now doesn't like mushrooms. I don't know what his problem is, but I sure enjoy them!

I learned this past week what a portobello mushroom was. I had two customers that bought them. They are really huge! I can imagine how great they must taste stuffed. Hope you enjoyed your dinner.

Rachel Ray used to make portobello burgers on her 30-Miknute mMeals show. She grilled it like a burger and put it on a roll with toppings. I haven't tried it, but it looked awfully good on TV!
