  Countdown to My Day Off

If I seem overly excited please forgive me, but the thought that I get to go home tonight and relax, thrills me to no end. I don't have to get up at 5:30 a.m. I'm happy as can be. The most taxing thing I'm going to do tomorrow is mow the lawn! Then I'll jump in the pool and float around for several hours and just enjoy the rest of my day. Hubby will grill fish tomorrow while I make a very low calorie cheesecake pie. Yep. Very low cal! Believe me. Want the recipe? Write me and I'll send it.

We did one traditional thing --- we did get a watermelon. They were only $2.99 yesterday with a coupon, so we got one. I mean the 4th wouldn't be the 4th without watermelon!

Today the students have been great. This is the end of the "3rd 9 weeks" officially so I've been grading papers all day long. I do it here to avoid doing it at home. I'm like the students, I think you shouldn't have homework in summer school. We're going to watch "Pearl Harbor" when we go back to the room. It's their treat while I finish their grades and get their report cards ready. We only have 4 more days next week and we're done. Then I'll be full time at Universal till school starts.

Summer is much more laid back than the school year -- thank heavens. Tonight we have movies to watch and I'm going to sip a glass of wine later on and veg on the sofa in front of the boob tube. Yep when you get to be my age and work as hard as I do, you take advantage of any free time you may have. This feels like a great night to get pizza as a matter of fact! (I'll be having vegetables, however)

Okay, what is everyone doing for the 4th? We're just sort of laying around in the pool and grilling. Nothing special, but it's special to me!

My holiday plan: Relaxing with Wimbledon tennis, watching fireworks and enjoying some great food. Hope you have a great weekend, too!

Hi, Deb, the dish with the acina di pepe can be used as a dessert. It is called Hawaiian Fruit Salad but I have seen very similar recipes with other names too. It is a sweet tasting fruit salad with the tiny pasta, crushed pineapple, mandarin oranges, whipped topping and maraschino cherries in a syrup base that you cook with the juice from the canned fruit. You let it chill and it is quite tasty especially on a hot summer day.

We are going to the lake for 4 days of swimming, camping, and total relaxation. I can't wait to leave.

We're having a BBQ on Sunday for a few people and I couldn't think of what to have for dessert. Cake just doesn't do it even tho that what one of the couples served when they hosted on Memorial day! But I just saw the answer in your post!! Watermelon! Donna has something else on the list, but I don't know if it's dessert or some kind of salad. Anyway, we haven't been camping this summer, but I'll get to cook over a wood fire which is one of the things I like about camping!

A small round pasta used in soups. The name translates to "peppercorns" in Italian and describes the size and shape of the little pasta.

That cake would be passable (if one has to have cake) But I'd have to pick up most of the ingredients tomorrow evening, and I'd rather not. The thing I had mentioned to Donna is something made I think basically with cream that has fruit and stuff (excuse the expression)suspended in it. On the grocery list she has acina de pepe. I hope the cream thing is what that is! Watermelon I can get tomorrow, and that will be that!

One cake that is a hit is a red white a blue cake. You take a pre-made sponge cake or yellow cake, frost it with cool whip and do strawberries and blueberries on it. It makes a great 4th of July cake by the way!

the fourth will probably be just another day here. One son is too far for sister to go see, and the other is just getting in from Germany and will probably have jet lag. He gets in late today. Has been gone a week on business there. So, I will go get a watermellon tho. And put my flag out.
