ONe of the things in life that means something to me is eating a great meal with a good friend an enjoying a good conversation. My husband has incredibly after 28 years, still provided me with great conversation and I provide the great meal. Yes, folks, I am the cook.
Tonight's dinner was a panko encrusted chicken breast that also was herbed with some oregano, parmesan, and sea salt along with some oven roasted portobello mushrooms, some fingerling potatoes (yukon gold of course to be lower cal, lower carb) and some summer squash. A great chardonnay finished off the meal. I prefer La Crema, but tonight I went a bit less expensive with Twin Fin, a lovely fruity chardonnay. (Don't I just sound like a chef) Anyway, it was delicious and unfortunately no left overs. I'm stuffed, but with good well cooked food. If you don't know what panko is, it's Japanese bread crumbs and it makes food so much more crispy and crunchy. If you like eggplant parmesan, try it with panko in the oven and it will be twice as crispy as frying it. Just use a little olive oil. Yum.
Good converstion and very enjoyable time together and it's only 4:32 believe it or not.
Anyway, just wanted to tell you about good food and good laughter. These are things that really matter. Later.
P.S. Lord of the Rings is on TNT. That's also good!
