  Tried to Write a Post About My Eggplant Parmesan

Then the internet just crashed out on me. I hate it when that happens. I made the best eggplant parmesan I've ever made and it is all because of Panko Crumbs. (Japanese breadcrumbs) It makes it super crunchy so that when you put the sauce and the cheese on top it still stands up. If you would like to recipe let me know. It was absolutely yummy and gone almost before I got it out of the oven. I'm stuffed.

My Bucs lost today, booo, but then it was Drew and the Saints, so I couldn't be real upset. they are another team that I like. I can't wait to watch the Pats as well. Football time is when I blossom. I loved college yesterday and enjoyed watching my Bulldogs walke all over Central MIchigan, sorry if anyone is a fan. I'm just a really enthusiastic Bulldog fan because my son will be on their roster as of January. It was a good game, I guess. I just enjoy football and this is the first weekend.

It is 42 days till my cruise! Ahhhhhhhhh, just the thought of it relaxes me. I can't wait to be on the ship, looking out at the ocean, seeing the sky and the horizon. It's amazing and something so restful about it. My bff travel buddy feels the same way. We always count the days and enjoy that few hours at sea. We wander around the ship. I'll play a few slots at night, but only as much as I brought to gamble maybe $100, max. If I win, I leave. It's a mental thing I have. Than when we get to Cozumel, the shopping and the huge fishbowl margarita, I've been waiting to try for 3 years. (I told my friend, I have zero tolerance so she'll have to help me.) Can't wait! Anyway, enough daydreaming. I'm just looking forward to a short peaceful time. I'm so in need of it right now. I can't even explain.

Hoping all these hurricanes and tropical storms don't mess up your cruise hopes and dreams. I know the hurricane season lasts until Nov. 1, but I'm praying it will lose its steam before your trip, or at least stay the heck away from the Gulf and Mexico. Do you buy hurricane insurance?

I'd love the recipe please. I use panko breadcrumbs all the time, they do really stand up well. I bread fish with panko and it's the best. I'm always at a loss with eggplant. It's such a beautiful vegetable, with that passionate purple colour, but the taste is so............ bland, I guess. I use it in spaghetti sauce, and in a lot of Indian dishes I make because it such a neutral flavour it picks up and carries spices very well. I have never made Mousakka or Eggplant Parmesan.

I think I've always tried to cook it too fast, cooking it slowly with the panko and it was so crunchy and good. Not mushy at all. Great stuff!

It was absolutely perfect. YOu have to try this. I'll send you the directions for how to make it with the panko.

I remember all the crusies (including a Weight Watchers one!!)I took in the 70s--loved them then!!!
